Recipe: Summer Salad

A simple, refreshing summer tossed salad with a tasty vinaigrette dressing
It’s officially summer, which means fresh fruits and veggies for the next few months. Whether you’re growing a garden of your own, or enjoying a trip to the farmers’ market, you’re going to need some ideas of what to do with all that produce.
For us, salad is the perfect accompaniment to most dinners, and an easy (and delicious/healthy) way to use up excess produce. With that in mind, please enjoy this simple tossed salad recipe full of fresh veggies and big on taste!

Simple Summer Salad Ingredients
3 cups greens (spinach, fresh lettuce, spring mix, a mixture of greens—whatever you have on hand or enjoy is fair game!)
1-2 carrots, peeled and sliced into medallions
English cucumber, about 8-10 slices, halved
Radish, thinly sliced to taste
Red onion, thinly sliced to taste
Tomatoes (whatever you have on hand, from cherry tomatoes to Roma, which you’ll want to chop into bite-sized pieces)
Goat cheese, crumbled, about 2 oz.
Slivered almonds, toasted, to taste (for an optional crunchy topping)
Simple Summer Salad Dressing Ingredients
2 tbsp Dijon mustard
2 tbsp red wine vinegar
6 tbsp olive oil or light salad oil
1 tbsp honey
Salt and pepper to taste
1 garlic clove, grated or finely chopped
Directions
Wash and prepare your greens, then add all the salad ingredients to serving bowl and toss.
Combine dressing ingredients in a small jar, seal and shake vigorously until ingredients combine.
Pour dressing over the prepared salad, toss again, and enjoy!
Feel free to add protein (like grilled chicken or salmon) to make it a meal or serve as a side dish along with other items. Dressed salad doesn’t usually keep well, so if you’re hoping for leftovers, you may allow your guests or family members to dress their salads individually.
