Simple Supper: Mississippi Pot Roast

It’s probably no surprise, but I’m a Pinterest fan. Over the years, I’d noticed tons of recipes for something called “Mississippi Pot Roast,” but I’d never tried it. Then, I was eating dinner at the home of some friends, and they served it. I was hooked!

Besides being tasty, Mississippi is simple and easy. Stick a few ingredients in the crock pot before work and at dinnertime, you’ll just have to add a few sides for a complete, easy, quick meal.
The Simple Supper Menu
Green Beans (however you prefer to prepare them)
Egg noodles or rice (if you have more time, you can make mashed potatoes
Mississippi Pot Roast
Ingredients
Chuck roast, around 3 lbs.
1 stick butter
1 packet dry ranch dressing mix
1 packet brown gravy mix (I use low sodium)
Whole pepperoncini peppers (add a few to your taste and pour in a little liquid from the jar)
Directions
Place the meat in your crock pot.
Top with one stick of butter (you can slice if you want, but I just stick it on top of the meat!)
Sprinkle on seasoning packets, place pepperoncini peppers on top and pour on a little of the liquid from the jar.
Put the lid on the crock pot and let cook for 8 hours on low.
When you come home, shred the roast and turn the crockpot to warm while you prepare the rest of the meal.
Quick Table Salad
Chop or tear romaine lettuce. Top with sliced cucumbers, celery and carrots, tomatoes if desired. Sprinkle with sliced almonds and feta cheese. Drizzle with dressing of your choice.
I've pinned this before too, but haven't tried it yet. I love those peppers and will definitely try it on your recommendation!
