Fall is here, and with the falling temps and leaves comes the need for easy evening meals that are full of flavor. So, if you’re looking for a meal plan that’s high on flavor and pretty quick and easy to prepare, we can help!

Apple Cider Glazed Chicken
Autumn seems to be a season for deep, rich flavors, and this weeknight dish shouldn’t disappoint! Using an apple cider concentrate (you boil it down a bit to make it thicker and concentrate the taste) as well as garlic and rosemary, this recipe features chicken thighs, which happen to cook a little faster than breasts, which is perfect for a weekday dinner! We like this recipe from the Kitchn.
Roasted Brussel Sprouts
Brussel sprouts get a bad rap, but roasted brussel sprouts? I mean, really good roasted brussel sprouts? They’re delicious. We like them best with bacon and Parmesan, but it’s fall, so we’re leaning into the seasonal flavors with a little maple syrup. And we’re making the whole process of getting dinner on the table a tiny bit faster by using the air fryer. We’re loving this recipe from the Foodie Eats. (You can also roast in a skillet if you'd prefer!)
Green Salad with Craisins, Pecans and Apple Cider Vinaigrette
So, let’s just go all in on fall in this Simple Supper menu and take the apple cider adventure straight to the salad! Keep it simple with red leaf lettuce (or whatever green you prefer), pecans, craisins and feta cheese for your salad. Then, whip up a simple apple cider vinaigrette.
