Recipe: Ice Cream Dessert

This ice cream dessert is a sure-fire favorite when you need a quick, easy dessert!
This is a favorite summer dessert in the Crow family, one my mom has made for summer birthday celebrations, Sunday dinners or just when you need a quick, easy dessert that’s always a hit. You can use whatever ice cream you have on hand—the recipe calls for vanilla, but don’t let that stop you from trying other flavors!
Ice Cream Dessert Ingredients
2 ½ cups Rice Krispies
1 can flake coconut
1 cup chopped pecans
1 stick melted butter
¾ cup brown sugar
½ gallon ice cream (vanilla or whatever flavor you have on hand)

Ice Cream Dessert Directions
Combine cereal, coconut and pecans.
In a small saucepan, melt together the butter and brown sugar until just melted.
Pour the butter mixture in the Rice Krispies mixture. Fold and toss until everything is coated.
Reserve one cup of this mixture.
Press the remaining mixture into the bottom of a 9x13 pan.
Evenly place ice cream on top of the crust.
Sprinkle the remaining 1 cup mixture on top of the ice cream.
Cover with foil and place in the freezer.
Serve with your favorite toppings (chocolate syrup, caramel sauce, crushed cookies or candy, whatever you like) and whipped cream.
