Mandy’s award-winning salsa

I thought I’d share a little recipe with you guys. And since I just won such “honors” for my salsa at work, I thought I’d give you all the recipe. Brandy, it’s a fiesta in your mouth!
Ingredients: • 2 cans petite diced tomatoes, well drained • 2 cans Rotel tomatoes (I use the kind with chiles, cilantro, and lime), one well drained • chopped onion (to taste) If it’s a small onion, about the size of my fist, I use it all. If it’s a huge onion, I use about 1/2 to 3/4. I also chop mine up into almost a paste in my electric food chopper. • 1/2 to 3/4 of green bell pepper. I also chop this in the food chopper so that it’s very finely chopped. • 1/2 to 3/4 jalapeno or other pepper. Clean and chop finely in the food chopper. • 1 envelope of zesty Italian dressing seasoning • Juice of one lime • About 1/2 to 3/4 cup of cilantro, chopped finely • Black pepper (to taste, about 1 tsp) • salt (to taste) • red pepper (just a little to add kick and heat) • minced garlic (I use about 1/2 tablespoon, but I like garlic)
To make the salsa, basically dump all this stuff together in a large bowl. Mix and stir. Stir and mix. Make sure all spices have been incorporated. You may think that the salsa is too chunky. I like mine sort of pureed, so I run it through the food chopper again at this point, then serve. Try it with those touch of lime chips by Tostitos. I love them! 🙂
