The recipe: White Lasagna Soup

The details: I'm one of those people who reads cookbooks. When I first got Super Easy!, I went through the whole book and marked recipes I wanted to try. This soup recipe featuring mushrooms and heavy cream and ricotta sounded amazing—and found its way to the top of my list.
The adjustments: When I went shopping for ingredients for this recipe, the store I was at was 100% out of heavy cream. Yes, that’s craziness and unacceptable, but it happened. I was shopping after a marathon of errands and did not feel like running to another store, so I chose the next best thing: half and half. Let’s just say that maybe it would have been better to run to another store.
The verdict: I so wanted this recipe to be amazing. I mean, you drizzle pesto (one of my favorite things ever) on top! But this recipe just did not turn out for me at all—probably all home cook errors if I'm being honest. First, I didn't really have enough mushrooms to make the dish, but decided to forge ahead. (Tip: Read the recipe all the way through and note the amount you need on your shopping list.) After adding the flour and broth, my soup never really thickened—which is likely my fault because I wasn't paying attention. I have a 4-month-old puppy who is potty training and I got pulled away frequently while making this recipe, meaning there's a likelihood I skipped or rushed over a step. Also, I think the half and half substitution maybe wasn't the best idea. The flour mixture didn't thicken and the half and half didn't help. Maybe I'll try again someday with all the right ingredients, but it will be a while!
